Watermelon Mint Salad



4 cups watermelon chunks (1 small watermelon- about 3 lbs.)

2 tbsp. fresh lime juice

½ tsp. fresh lime zest

¼ cup fresh mint leaves, chopped

¼ tsp. sea salt




  1. Dice the watermelon into 1-inch chunks removing the seeds while you cut and place the chunks in a large bowl
  2. Add the lime juice, zest, mint leaves, and sea salt and toss until chunks are evenly coated and mint leaves are evenly distributed
  3. Serve cold and enjoy!


Notes: feta cheese also goes great in this dish- add ¼ cup if you want to try it
