Poached Figs, Nectarines, and Plums
Serves 4
Ingredients:
½ cup 100% apple juice
1 tbsp. honey
4 fresh figs, quartered
2 nectarines, peeled and quartered
2 plums, halved and pitted
2 tbsp. 100% orange juice
½ tsp. ground cinnamon (optional)
Instructions:
- Heat the apple juice and honey in a sauce pan on stove over medium heat
- Add the figs, nectarines, and plums and bring to a boil
- Reduce to a simmer, cover and let cook for 5 minutes
- Lift the fruit out with a slotted spoon and place them in a medium bowl
- Bring the juice back to a boil in the pan, add the cinnamon, then let the mixture simmer and reduce into a thick syrup
- Pour the syrup over the fruit, then add the fresh orange juice
- Serve warm
- Store in a covered container in the refrigerator for up to 3 or 4 days
Notes:
- Goes great with vanilla yogurt or frozen yogurt
- Optional topping of slivered almonds or other nuts
