Blueberry Breakfast Bars

Serves 12

 

Ingredients:

Filling

1 ½ cup fresh blueberries

¼ cup pure maple syrup

1 tsp. lemon juice

½ tsp. vanilla extract

 

Bars

½ cup whole wheat flour

1/3 cup coconut palm sugar

¼ tsp baking soda

¼ tsp. salt

¼ cup avocado oil

1 ¼ cup quick cooking oats

2 tbsp. 100% apple or orange juice

 

Instructions:

  1. Preheat oven to 375 and spray an 8×8 inch glass baking dish with cooking spray
  2. In a medium bowl, combine flour, coconut palm sugar, baking soda, and salt and mix until evenly distributed
  3. Add avocado oil, oats, and apple or orange juice and stir until combined
  4. Take out ¾ of the mixture and set it aside for the topping
  5. Press the remaining part of the oat mixture into the bottom of the prepared baking dish forming an even layer all across the bottom (rubber spatula works well to press it down)
  6. For the filling: place a skillet on the stove over medium heat and add the blueberries, maple syrup, lemon juice, and vanilla extract
  7. Bring to a boil for 2 minutes then and reduce to a simmer, stirring every other minute, until thickened (this takes about 25 to 30 minutes)
  8. Once it forms a thick saucy substance, pour on top of the bottom layer in the baking dish then add the remaining part of the oat mixture by crumbling it with your hands and spreading it out as an even layer over the top of the blueberries
  9. Bake for 35 minutes, until golden brown on the edges and top
  10. Remove from oven and let cool completely before cutting into bars
