Zucchini Pizza Bites

Serves 4


2 medium zucchini

1 tbsp. extra virgin olive oil

1 small clove fresh garlic, minced or ¼ tsp garlic powder

¼ tsp salt

¼ tsp black pepper

2 tbsp. parmesan cheese, grated

½ cup mozzarella cheese, shredded

1 tsp. Italian Herb blend or 4 fresh basil leaves, finely chopped



  1. Preheat oven to 350 degrees Fahrenheit
  2. Line a cookie sheet with foil and spray with a non-stick cooking spray
  3. Slice the top and bottom parts off the zucchini, then slice into round pieces about ¼ inch thick
  4. Mix the minced garlic pieces or garlic powder, salt, and pepper in with the olive oil
  5. Lay the pieces on the baking sheet, then use a spoon to spread the extra virgin olive oil and garlic mixture on each one covering the top surface
  6. If cheese is in blocks, grate or shred them to equal the amounts listed above
  7. Add the mozzarella cheese to each piece, then sprinkle the parmesan on top of each piece
  8. If you are using the dried Italian herb blend, use your fingers to sprinkle the desired amount on top of each piece
  9. If you are using fresh basil leaves, chop them into small pieces then add the desired amount on top of each piece of zucchini
  10. Bake for 20 to 25 minutes, until cheese is melted
  11. Serve warm and enjoy!
