Fresh Herb and Veggie Salad

Serves 2



2 cups lettuce, washed and cut

2 cups spinach leaves, washed

¼ cup carrots, diced

½ cup cucumber, diced

½ cup snap peas or snow peas, tips removed

¼ cup red onion, diced

¼ cup mushrooms, chopped

½ cup tomato, diced

½ cup bell pepper, diced

¼ cup radishes, chopped

2 tbsp. fresh basil, chopped

2 tbsp. fresh rosemary chopped



2 tbsp. balsamic vinegar or red wine vinegar

1 tbsp. Dijon mustard

1 tbsp. extra virgin olive oil

1 tsp. honey

1 clove fresh garlic, minced

¼ tsp. sea slat

¼ tsp. black pepper



  1. Wash, chop and dice all fresh vegetables and herbs and combine in a large bowl
  2. In a small bowl, whisk together the dressing ingredients until combined
  3. Add dressing to the salad and toss until vegetables are well covered and dressing is evenly distributed
  4. Serve and enjoy!


Note: Feel free to leave out any veggies that you don’t have or don’t like, or switch some out for ones you do have and do like!
