Fresh Herb and Veggie Salad
Serves 2
Ingredients:
2 cups lettuce, washed and cut
2 cups spinach leaves, washed
¼ cup carrots, diced
½ cup cucumber, diced
½ cup snap peas or snow peas, tips removed
¼ cup red onion, diced
¼ cup mushrooms, chopped
½ cup tomato, diced
½ cup bell pepper, diced
¼ cup radishes, chopped
2 tbsp. fresh basil, chopped
2 tbsp. fresh rosemary chopped
Dressing:
2 tbsp. balsamic vinegar or red wine vinegar
1 tbsp. Dijon mustard
1 tbsp. extra virgin olive oil
1 tsp. honey
1 clove fresh garlic, minced
¼ tsp. sea slat
¼ tsp. black pepper
Instructions:
- Wash, chop and dice all fresh vegetables and herbs and combine in a large bowl
- In a small bowl, whisk together the dressing ingredients until combined
- Add dressing to the salad and toss until vegetables are well covered and dressing is evenly distributed
- Serve and enjoy!
Note: Feel free to leave out any veggies that you don’t have or don’t like, or switch some out for ones you do have and do like!
