Cool Cumber Salad
Serves 8
Ingredients:
2 medium cucumbers
2 medium tomatoes
½ small red onion
1 bunch fresh parsley, chopped
¼ cup extra virgin olive oil or avocado oil
1 tbsp. red wine vinegar
1 tbsp. lemon juice
½ tsp. sea salt
¼ tsp. cracked pepper
Instructions:
- Slice onion into small, thin pieces and place in a bowl of ice water, allowing them to soak for 10 minutes (this will help remove the intense kick of red onion’s natural taste)
- Peel and slice cucumbers into small, bite-sized pieces
- Slice tomatoes into bite sized pieces and place in the bowl with the cumber
- Drain the onion and add it and the chopped parsley to the bowl with tomatoes and cumbers
- In a small bowl, whisk together olive oil, red wine vinegar, lemon juice, sea salt and pepper
- Pour on top of vegetable mixture and toss until well coated
- Serve and enjoy!
- Store in an airtight container in the refrigerator
