Cool Cumber Salad

Serves 8



2 medium cucumbers

2 medium tomatoes

½ small red onion

1 bunch fresh parsley, chopped

¼ cup extra virgin olive oil or avocado oil

1 tbsp. red wine vinegar

1 tbsp. lemon juice

½ tsp. sea salt

¼ tsp. cracked pepper



  1. Slice onion into small, thin pieces and place in a bowl of ice water, allowing them to soak for 10 minutes (this will help remove the intense kick of red onion’s natural taste)
  2. Peel and slice cucumbers into small, bite-sized pieces
  3. Slice tomatoes into bite sized pieces and place in the bowl with the cumber
  4. Drain the onion and add it and the chopped parsley to the bowl with tomatoes and cumbers
  5. In a small bowl, whisk together olive oil, red wine vinegar, lemon juice, sea salt and pepper
  6. Pour on top of vegetable mixture and toss until well coated
  7. Serve and enjoy!
  8. Store in an airtight container in the refrigerator
