Broccoli Salad
Ingredients:
4 cups broccoli florets (about 2 small heads)
¼ red onion, diced
1 large carrot
1 cup grapes
¼ cup slivered almonds or sunflower seeds
Dressing:
1 cup plain yogurt
1 tbsp. apple cider vinegar
1 tbsp. honey
¼ tsp. salt
Instructions:
- Prepare dressing by stirring together all ingredients until combined then set asisde in the refrigerator while preparing salad
- Cut broccoli into small, bite sized pieces and place in large bowl
- Peel the carrot, then use a large-holed cheese grater to shred into the bowl, or simpy chop into small pieces
- Slice the red onion into paper thin slices and add to bowl
- Cut grapes in half then add to the bowl, along with slivered almonds or sunflower seeds
- Pour the prepared dressing over the salad and toss until well coated
- Place the salad back in the refrigerator and let it marinate for 15 to 20 minutes before serving
- Give the salad a quick stir before serving to spread the dressing out again
- Enjoy!
Note: feel free to add any herbs or spices for desired flavors
