Apple Cabbage Slaw
Serves 4-6
Ingredients:
½ small head cabbage
¼ small red onion
1 small green apple
2 tbsp. extra virgin olive oil
4 tbsp. lemon juice
2 tsp. honey
¼ tsp. sea salt
Black pepper to taste
Instructions:
- Chop the cabbage into shreds and place in a large bowl
- Slice the onion into small, thin pieces and add to bowl with cabbage
- Dice the green apple into small pieces and place in bowl with cabbage and onion
- In a small bowl, combine the olive oil, lemon juice, honey, and sea salt
- Pour oil mixture on top of slaw mixture and toss until evenly coated
- Add black pepper to taste
- Store in an airtight container in the refrigerator
Notes:
- Add slivered almonds for an extra crunch and along with added protein, fiber, healthy fats, and other nutrients
- Great side dish for parties and picnics
